1.11.15 I have something to say about

I have something to say about the little things we may not notice but it made my life just a little bit easier.

Today I found a Ziplock bag with a tab. It may seem little but it makes the bag so much easier to open, the designer deserves a prize and my gratitude. It must have registered that in opening a resuseable bag you have to find the split slit opening that folding over a seam in half and rubbing together and pinching, flicking and fingernail searching finally greets you with 2 flaps so you can open the bag. Yes the tab a litter longer than the matching side works so well.   You may ask what does this have to do with Delicious? So, I have to say the triple ginger, likikoi (passion fruit) glazed gluten free cookie from Mana Foods needed to be stored because it was too big to eat in one sitting.

For all of us who live on Maui this little gem of a store gets more crowded every time we visit.  It is a personal treat of an outing because in such a tiny place you will find the organic foods mainstay for our community. You will find innovation at work in every corner.  I may not espouse the beliefs that they embrace because I am a lover of Jesus, but there is lots to enjoy without being contrary.  You will find cookware, glass jars of every size and function from all over the globe. You will find reusable flatware made with sustainable materials like coconut wooden spoons, cups and the greatest assortment of kitchen gadgets in a 3 foot square area.  I got a pan today that I may never see again but someone of the many buyers (who may be so interesting) thoughtfully brought it to my realm - my kitchen where I intend to make some seriously simple but kick-okole food.

The transition from Delicious for Delicious has to do with taking the traditional foods we have learned to love because of our culture and transferring it to a delicious health promoting food.  It all starts with fresh ingredients.  I took a hot dog recipe and made it kick okole!

2 hot dogs or smoked sausage that are non nitrite
2 to 4 heads of baby bok choi cabbage
1 tsp Ghee - clarified butter or coconut oil
1 tsp good quality oyster sauce

In my new pretty green ceramic coated cast iron pan, I diagonally cut the doggies, sautéed in ghee and when browned threw in the cleaned whole leaves of the bock choi. Add a small amount of water to the stir fry to get the cabbage steamed not burned and a dollop of oyster sauce to finish off till the cabbage is tender crisp.

Serve on the table in the pretty green pan with kim chee side dishes. We had quinoa spinach salad, some left over thai noodle salad and asian hot chili slaw.

From grocery bag to completed lunch, less than half an hour. There were lots of green leafy vegetables a few carbs from the quinoa and noodles but then there was that triple ginger cookie I mentioned at the start. Awue! No worries it is all good because when you make a choice, make it with fervor or vigor or gusto or I own it!
